Since 1980, we’re produicing boutique sparkling wines, best know as “crémant d’Alsace” in french.
The white sparkling are from pinot gris, pinot blanc and auxerrois grapes and the rosé from pinot noir.
Hand-picked grapes are gently pressed and the juice is fermented in stainless steel tank. Added with yeasts and sugar, the wine is put in bottle where a second alcoholic fermentation is taking place. This process named as “méthode traditionnelle” ( tradtional method ) give efervescence to the wine.
Bottle are stored in your naturally cool temperature cellar which allows fermentation to be slow and gives tiny bubble and delicate aromas. Disgorgment is place 18 to 24 months after bottling. The crémant is then ready to be appreciated.
